All Purpose Gluten Free Flour Blend

Allergies or no allergies, a good kitchen scale is a valuable tool. You will encounter many recipes on your cooking adventures that require measurements by mass. It will also help you achieve consistent sizing when batch cooking. If you are using this table to adapt a recipe that is given in cups, I calculate my required masses using the constant: 1 Cup = 163 grams. This is the average mass of a cup of regular wheat flour, buckwheat flour, my own homemade flour blend, and my preferred premixed gluten free all purpose flour, Better Batter. The table below is my preferred blend for making cookies, cake, brownies, and most other sweets. If you want a bread, biscuit, or tortilla with a plainer flavor, use this blend.

Gluten Free Multi-Grain Flour Blend

This is the blend I use when making breads, bagels, pancakes, waffles, and anything else I want to incorporate a multi-grain flavor. The addition of Amaranth flour is how we achieve this flavor.
